As a chef, food writer, sustainable food entrepreneur and soon-to-be olive oil sommelier, I have always believed that incredible food begins with seasonal ingredients from small producers who really care about the food they produce. Food doesn’t have to be complicated. That is the joy of an incredible olive oil. A drizzle can take almost any ingredient to the next level; from fresh greens and charred-grilled veggies to more complicated soups and stews. Great olive oil gives you a special dish that’s not just delicious but healthy and nourishing too. This is why I’m passionate about introducing Ireland to the finest premium Spanish olive oil crafted by producers who share my dedication to excellence.
A Culinary Journey to the Best Olive Oils
My love affair with olive oil began during the years I spent living and working in Spain. As a chef in Barcelona, I was immersed in a food culture where every ingredient matters. There, I first discovered the incredible depth of flavour and versatility that cold-pressed EVOO—or extra virgin olive oil—can offer.These olive oils were so different from the flavourless, mass-produced stuff I’d tasted before. My mind and taste buds were blown.When I returned to Ireland I couldn’t find anything like the oils I’d tasted in Spain and that’s when I decided to start this business. A cheffriend from the Jaen region of Andalucía introduced me to some incredible olive oil producers, and I went from there.

As I learnt more about olive oil, I started seeking specific producers like Nobleza del Sur and Finca la Torre. From the start, I knew I only wanted to sell the best and never compromise on quality. I only sell early harvest, single estate olive oils sourced from passionate producers who have dedicated their lives to creating the highest quality olive oil. My Mission? Supplying high polyphenol olive oil that not only tastes incredible, but also offers an incredible array of health benefits.
Sustainably Sourced Olive Oil
I work directly with producers after each harvest, curating a selection of the best award-winning EVOOs available. Some batches are so small that they sell out well before the year is out and are more challenging to track down, while others are recognised worldwide.Most of the producers I work with farm organically (even biodynamically). They work hard to preserve and improvethe quality and biodiversity of their farmland.
The Promise? These were the many questions my customers would ask. They have become the catalyst for creating more informative foodie events. Educating people about olive oil - how to taste it, what the different varieties are, benefits of olive oil, how to use them, and how to choose the best one for the job. It’s what I love to do. It has led me to host olive oil tasting and education events for professionals and foodies in places like TUDublin throughout the year. I also collaborate regularly with chefs on olive oil pairing dinners and events or with nutritionists to spread the word about how early harvest EVOO is truly the healthiest olive oil you can use.
